Cinnamon Candied Almonds are one of the best holiday treats! I’ve been making these for years and once you try them you’ll see why. They are easy to make and seriously delicious!

You wouldn’t believe how quickly a batch of these almonds disappears at my house! And they are a treat I feel better about feeding my family versus cookies, although we have plenty of those around here this time of year too – who am I kidding :)?

But the point is if you are looking for a treat that does have some nutritional value then this is a good way to go.

Candied Almonds

Ingredients Needed for This Recipe

  • light-brown sugar
  • granulated sugar
  • Siagon cinnamon
  • fine sea salt
  • whole almonds
  • egg white
  • water
  • vanilla extract

How do You Make Candied Almonds?

  • Preheat oven and prepare baking sheet.
  • Combine brown sugar, granulated sugar, cinnamon and salt, set aside.
  • Place almonds in a large bowl.
  • In a separate bowl whisk egg white, water and vanilla until frothy. Pour over almonds in mixing bowl and toss to evenly coat.
  • Add sugar mixture to almonds and toss to coat. Spread into an even layer on prepared baking sheet.
  • Bake in preheated oven, tossing every 15 minutes, for 60 minutes total.
  • Let cool then store in an airtight container for up to one week

The Brand of Nuts I Use

For as long as I can remember I’ve been using Fisher Whole Almonds or Pecans for this recipe. Fisher is a brand I’m confident in and I love knowing their nuts are preservative free!

The only ingredient is the nuts. Just the way it should be.

These would make a perfect gift to give for friends or loved ones for Christmas. I’m thinking these will be my treat to make and share this year because they are so easy to make yet they are so amazingly delicious!

Once you start popping them you can’t stop. I think I ate half the jar myself today.

Another Variation on This Recipe

Another variation I love on these, which is a chai spice blend I use:

  • 1 1/2 tsp cinnamon
  • 3/4 tsp dried ginger
  • 3/4 tsp cardamom
  • 1/4 tsp ground cloves
  • 1/8 tsp ground pepper

Surprisingly the flavors aren’t nearly as bold as you think they’d be and they’re so delicious.

  • Preheat oven to 250 degrees Fahrenheit. Line a rimmed 18 by 13-inch baking sheet with parchment paper or a silicone baking mat.
  • In a medium mixing bowl whisk together brown sugar, granulated sugar, cinnamon and salt, set aside.
  • Place almonds in a large mixing bowl.
  • In a separate small mixing bowl whisk egg white, water and vanilla until frothy. Pour over almonds in mixing bowl and toss to evenly coat. 
  • Add sugar mixture to almonds and toss to evenly coat. Spread into an even layer on prepared baking sheet. 
  • Bake in preheated oven, tossing every 15 minutes (three times throughout baking), for 60 minutes total.
  • Let cool then store in an airtight container for up to one week.
