Roasted Sweet Potatoes with Sweet Cinnamon and Honey

It’s recipes like this that make it possible for me to get my kids to eat their veggies.

Any vegetable is better with butter, right? And sweet potatoes are almost like a treat, especially when you add a little honey and cinnamon so no one could resist these!

They’re really easy to make. It’s just a bit of dicing then pour those sweet potatoes into a baking dish and toss everything with that melted, cinnamon honey butter mixture then toss it in the oven.

Then they roast for about 50 minutes until they’re soft (not mushy though, we aren’t going for mashed potatoes) and they are just dreamy!

Tips for These Oven Baked Sweet Potatoes

I know a lot of roasted vegetables are roasted on a baking sheet for more space and even roasting and at a higher temperature, but here it actually works best to keep them close together and roast at a lower temperature so the honey doesn’t burn.

Here rather you’ll end up with extra honey butter at the bottom of the baking dish and you’ll toss over the potatoes at the end to make them that much better.

Serve these up with a roasted chicken and a green salad with a tangy cider vinaigrette dressing for the perfect fall meal!
