July 4th Cheesecake Bites (a no bake recipe)

July 4th Cheesecake Bites are the fast and easy no-bake dessert for your Independence Day barbecue! Whipped cream cheese filling is dolloped onto graham crackers, drizzled with raspberry topping and garnished with a fresh blueberry to create the red, white, and blue dessert adults and kids will love. 

It’s not news that I love cheesecake, but I don’t always have the time to make a cheesecake and wait for it to bake and set. No bake cheesecake bites are a favorite for me, since they are so fast and easy. It started with my original Mini Cheesecake Bites recipe—which is a family favorite. They’re fast, kid-friendly, and made of simple ingredients that are easy to keep on hand.

I was so excited about the original recipe that I wanted to make the July 4th version right away. So here they are… (It’s never to early to start planning, right?)

One reason these are incredible for the 4th of July is that you won’t have to heat up your kitchen to bake a delicious dessert. I don’t mind a baked or warm dessert in the summer, but it’s just not the season for it, you know? On the other hand, as much as I love frozen desserts like ice cream or popsicles, those can be stressful to take to barbecues, summer block parties, or fireworks shows since melting can get messy.

Instead, these no bake July 4th Cheesecake Bites can be whipped up quickly with no heat, don’t need to be frozen, and are the perfect size for small hands. But don’t worry—adults will love them too!

You could try swapping the berries and make a blueberry drizzle to top with a raspberry, or even add some fun sprinkles or Pop Rocks candy to make them Firework Cheesecake Bites!

Fun and festive easy to make no bake cheesecake bites!

Ingredients

  • 1 Recipe Cheesecake Bites , recipe found here
  • 1/4 cup seedless raspberry jam
  • 28 fresh blueberries

Instructions

  • Follow directions listed using 1/4 cup raspberry jam (for the jam called for) and top each mini cheesecake with a fresh blueberry. For best results serve immediately.
  • Note: for best results when cutting the graham crackers, if you open the package a day or two before cutting them you should have less breakage. You can use an unopened package you will just have more of them break when cutting, but you can always save the broken ones to make a graham cracker pie crust in the future.
