Skinny Banana Bread

Banana bread has always been one of my favorite treats as long as I can remember. I could eat it every single day. It’s easy to make, it uses basic pantry staples that I always keep on hand, and it’s a sweet my whole family can always agree on. Plus it makes a great dessert to bring to any get together because who doesn’t love it? The only draw back is that more often than not it’s packed with sugar and butter, which I personally think is fine in moderation, but if you want to enjoy it more often this a great recipe to use.

Try this one out, you’ll hardly notice much difference from this and your classic banana bread recipe. My husband said he couldn’t even tell the difference and my kids totally loved it! It’s worth trying at least because what have you got to lose, those overripe, generously speckled bananas might end up in the garbage anyway right? Don’t waste them and put them to good use with this delicious and moist, light banana bread!

Skinny Banana Bread

Delicious banana bread recipe made with just 2 Tbsp butter. Uses applesauce and Greek yogurt instead of a whole stick of butter yet it's still perfectly tasty!

  • Preheat oven to 350 degrees. Spray an 8 by 4-inch loaf pan with non-stick cooking spray. In a mixing bowl whisk together flour, baking soda, cinnamon and salt for 20 seconds, set aside.
  • In the bowl of an electric stand mixer blend together granulated sugar, brown sugar and butter until combined. Mix in applesauce then blend in eggs one at a time. Blend in mashed bananas, Greek yogurt and vanilla. With mixer set on low speed slowly add in flour mixture and mix until combined. Scrape down sides and bottom of bowl and fold batter several times to incorporate.
  • Pour batter into prepared loaf pan. Bake in preheated oven 55 - 60 minutes until toothpick inserted into center comes out clean, and tenting loaf as needed during last 15 - 20 minutes to prevent excess browning on top of loaf.
  • Cool in baking dish 5 minutes then remove from loaf pan and on cool on a wire rack. Store in an airtight container.

    can’t wait to try this recipe. I was trying to find a healthier banana muffin recipe that wasn’t fake and didn’t have chocolate in it (why do so many recipes have chocolate chips in them?) and this sounds perfect. I know the recipe is for a loaf, but I should be able to bake muffins from the batter, right?

    I didn’t have enough bananas (only a scant 1 cup) so I used additional applesauce to fill out the rest of the 1 1/2 cups. I had to bake it about 1h 20m. It worked perfectly, though! Thanks!

      I’ve read other recipes that have used fat free sour cream, so maybe it’ll be a similar sub for greek yogurt.

    Just made this and it is AWESOME! I have a favorite BB recipe, but it has much more butter and 1 cup of sugar, so I don’t make it often. I was so happy to see this and give it a try. I love it and so do my kids. This will become my go-to BB recipe!

    fine…I just baked two loaves of delicious banana nut bread using normal recipes. banana nut bread is NOT a staple in most households, but is a favorite of the over 65 yo kitchen jocks with a lot of time and a bunch of friends to entertain with cake or baked goods. All you did is put brown sugar and applesauce in this recipe…but if you wanted to reduce the calories really you would have used sugar substitutes. You also left out any nuts, a normal staple in banana NUT bread. Nuts add calories. Frankly, I think your recipe is for publication and hype, not for an improvement as you just changed ingredients without much honesty.

      Not sure exactly what you are getting at here, no one is forcing you to make this? It is lower calorie and lower fat than most traditional banana bread recipes and uses half the sugar whether you’d like to believe that or not. I never claimed it to be healthy just a better alternative than the classic. And I don’t believe in baking with artificial sugar substitutes, while they may reduce calories I think they taste bad and I don’t think they are good for you.

        Just compared my family’s favorite banana bread recipe (which is passed down my from husband’s grandmother and does NOT have nuts), and I would say this recipe has about half the sugar and fat, so “Skinny” applies in my opinion. I stay away from artificial substitutes too.

        Did you remove the Links to other blogs tab in your header? I always come to your site first when I do my weekly meal planning, but often used your your Links list when I needed more.

    Mmm…absolutely adore banana bread. Is there an alternative to applesauce? I’ve never seen it at a supermarket in Australia before.

      Homemade applesauce would probably be the best alternative. Canola oil would work too but obviously will increase calories :). You may be able to find it in the baby food jars, the apple one is the same thing just make sure it’s unsweetened.

    Love the use of applesauce here! This bread looks so fluffy and moist, you’d never know it was lightened up :)
