These Microwave Eggs in a Mug are ready to eat in 2 minutes with less mess, less stress and the same delicious fluffy scrambled eggs you get from cooking on the stovetop. Sign me up!
Spray a 10 - 12 oz. coffee mug with cooking spray or grease with butter.
Add eggs and milk to mug, season with salt and pepper and stir with a fork until well blended (be sure to break yolk or it can burst).
Microwave mixture on high for 40 seconds then stir edges inward. Microwave again for 20 seconds, stir again. Continue to microwave in 10 - 20 second intervals until just barely cooked through.
Serve warm.

How to Make a Bagel Breakfast Sandwich with Microwave Eggs:
Cook two slices of bacon (I usually cook in the microwave on a microwave safe plate with paper towels below and above bacon, for about 3 minutes or until cooked through).
Slice a savory bagel and toast in toaster oven. You can butter after toasting if preferred though I don't.
Meanwhile cook eggs in the microwave as directed (I use a 2 cup pyrex dish that's flat across the width of the dish on bottom).
Invert cooked egg over one bagel half then immediately top with shredded or thinly sliced cheddar.
Layer on a couple of tomato slices then top with cooked bacon.
Finish with a few avocado slices and top with the second half of the bagel (if you'd like you can also throw some spinach in too).
One of my favorite lazy breakfasts! You can lighten it up by cooking only 1 egg (reduce cook times listed slightly), skip bacon and serve on bagel thins.
