Instructions
Add fruit, yogurt, cream, honey and vanilla extract to a food processor. Tint with food coloring if using.
Pulse until fruit is pureed and mixture is well blended.
Using a funnel pour mixture into popsicles mold, leaving about 1/2-inch at the top for expansion. Place the popsicle lid over and insert popsicle sticks.
Transfer to freezer and freeze until solid, about 6 hours.
Remove popsicles from mold by running the outside under hot water briefly (or according to the manufacturers directions).
Store popsicles in the freezer in an airtight container.
Notes
*Fresh strawberries, blueberries, raspberries, peaches, mangoes, pineapple, cherries (seeded), or bananas (about 3) work best here.
**The amount of honey needed can be adjusted to taste. Some fruit is much sweeter while others are more tart. I just found on average 6 Tbsp was just about perfect every time.
Nutrition estimate based on using strawberries, other fruits will vary a bit.
