It’s perfectly rich and chocolatey, its fluffy, it’s moist, it has just the right amount of sweetness – oh and that topping! This cake is all the things you look forward to in a slice of cake and then some!


And there’s a secret ingredient that no on would suspect – mayonnaise!

Apparently this was a super popular recipe back in the day, my mom told me how much everyone loved it. So I’m not sure why I hadn’t heard of it until recently.

Better later than never though because I’m totally smitten!

Of course for this recipe I used my go-to mayonnaise – Best Food’s Mayonnaise (AKA Hellmann’s Mayonnaise). It’s rich and perfectly creamy and it’s a secret key ingredient in this cake. I always knew it was such a versatile ingredient but never thought to add it to cake! It just makes sense though when you check the ingredients label.

I love that I can purchase Hellman’s Mayonnaise and other Unilever foods in bulk at Sam’s Club. And while I’m shopping at Sam’s Club I love to use their Scan and Go App. The Scan and Go App is just as it’s titled – it lets you scan the items while you shop and simplifies the whole checkout process.

To use it you simply download the app (create an account, register your membership card and upload a payment method if you haven’t already) then as you are doing your shopping you simply scan an item you want to buy using the app and camera on your smart phone. Add it to your cart and continue to do this with all the items you want to purchase. Then make your payment using the app.

And here’s the best part – skip the check out lines! Simply proceed to the exit where a costumer service member will be waiting to scan the barcode on your app (which shows all of your purchases) and off you go! I love it!

Now pull out that mayonnaise and get baking! I know it may sound weird but it just works, this is such a dreamy cake and you’ll have everyone savoring every last bite! You can even add your own unique twist and try this cake with a chocolate fudge frosting or another frosting of choice.

My whole family loved this cake and I’m sure it won’t be forgotten. I know my kids will be asking for this again and again.

Chocolate Cake with Marshmallow Frosting

Rich and chocolatey cake topped with a light as air marshmallow frosting - that tastes like melted marshmallows! Such an irresistible cake and flavor combination!

Cook Time: 1 hour
Total Time: 4 hours
Servings: 15


  • 2 cups (250g) all-purpose flour (spooned and leveled)
  • 3/4 cup (65g) unsweetened cocoa powder (spooned and leveled)
  • 1 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 3 large eggs
  • 1 3/4 cups (360g) granulated sugar
  • 2 tsp vanilla extract
  • 1 cup + 2 Tbsp (246g) Hellmann's® or Best Foods® Mayonnaise
  • 1 1/3 cups (315ml) warm water
  • Chocolate shavings, for topping

Marshmallow Frosting

  • 4 large egg whites (make sure there's not even a drop of yolk!)
  • 1 cup (200g) granulated sugar
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract


  1. Preheat oven to 350 degrees. Spray a 13 by 9-inch baking dish with non-stick cooking spray.

  2. In a medium mixing bowl whisk together flour, cocoa powder, baking soda and baking powder for 20 seconds, set aside.

  3. In a separate large mixing bowl, using an electric hand mixer set on high speed, beat eggs, sugar and vanilla for 3 minutes. Blend in mayonnaise.

  4. Mix half of the flour mixture into the sugar/mayonnaise mixture, mix in the water then mix in remaining flour mixture. Pour into prepared pan. 

  5. Bake in preheated oven until toothpick inserted into center comes out clean, about 34 - 38 minutes. Let cool completely on a wire rack (I like to cover about halfway through to seal in moisture). 

  6. Frost completely cooled cake with marshmallow frosting then top with chocolate shavings. 

For the frosting:

  1. Fill a large saucepan with about 1 1/2-inches of water and bring to a simmer. Add egg whites, granulated sugar and cream of tartar to a heat proof bowl of an electric stand mixer.

  2. Set bowl over saucepan (make sure it doesn't touch water) and heat mixture, whisking constantly until it's very warm (I let mine get to 150 degrees), about 3 - 4 minutes. 

  3. Remove from heat and transfer bowl to electric stand mixer fitted with a whisk attachment. 

  4. Beat mixture beginning on low and increasing to high speed until stiff glossy peaks form, about 5 - 7 minutes. 

  5. Pour in vanilla during the last 10 seconds of mixing. For best results serve within a few hours of preparing - keep frosting cold.

    • Jaclyn: It could be a number of things – most likely my guess is a climate that’s too humid. It can also be an oily mixing bowl or a bit of egg yolk mixed in with the whites.   • Holly: Oh my gosh… this is called Chocolate Mayonnaise Cake! My mom still has the magazine clipping from back in the day. Funny story, my grandfather opened up a full line bakery, which now my dad owns and operates, in the 70s in our area also making German/Polish goods from scratch that you can’t find many places and when you do, it’s not legit from scratch. My grandfather’s parents were even born in Germany and many of the recipes that are adored in our area come from our ancestors, modified for bigger production. Anyway, at Christmas time starting at age 13 my sister and I would go in Friday evenings (the day my dad works a double!) and the Tuesday before Thanksgiving and help do all sorts of things to help him get ready for one of the busiest days of the year. BUT, the chocolate mayonnaise cake was the first baked good my sister and I ever made at home.
