Mini Chocolate Chip Cookies

My daughter put in a special request today for tiny chocolate chip cookies and tiny cupcakes (I finally found a tiny cupcake tin (smaller than a mini) at a local kitchen supply store so it’s a frequent request at our house). Since I love all things mini I decided why not, especially if it means I get to eat chocolate chip cookies.

I have to tell you, these are definitely one of my new favorite ways to enjoy chocolate chip cookies. They are just so pop-able and incredibly hard to resist!

You’ll think, okay I eat like 10 (that sounds like a lot, but remember these are bite-size), but no way is that going to happen. I set 10 in front of me but then just kept reaching for more and quickly lost count.

So yes, these are quite dangerous. Not to mention they taste like the perfect chocolate chip cookie. They are soft, chewy and moist and they have a generous amount of chocolate (which is always a must right?).  I used to always be into the large bakery size chocolate chip cookies but now I’ve finally met my match.

This recipe does make a ton, but remember they are tiny so you still just might want to double it. Especially if you are making these to take to a party. You can never have too many mini chocolate chip cookies!

I recommend having someone help you roll these just to make things go faster since there are so many (one person can scoop, the other person can roll) If you have kids around, I promise you they’ll love to help. My kids couldn’t get enough of these. Highlight of their day for sure! Mine too :).

Chocolate Chip Cookie Bites

These are the funnest tiniest chocolate chip cookies you'll ever have! They're perfectly poppable and incredibly irresistible and people of every age will love them! Makes approx. 144 bites.

Ingredients

  • Preheat oven to 350 degrees. In a mixing bowl whisk together flour, cornstarch, baking soda and salt for 20 seconds, set aside.
  • Place butter in a microwave safe bowl, heat in microwave on HIGH power until butter has melted halfway. Remove and whisk until fully melted. Pour butter into the bowl of an electric stand mixer.
  • Add brown sugar and granulated sugar, fit mixer with paddle attachment and blend mixture on medium speed until well combined. Mix in egg and vanilla extract. With mixer set on low speed, slowly add in dry ingredients and mix until combined. Stir in chocolate chips.
  • Scoop dough out a slightly heaping 1/2 tsp at a time and drop onto plates (wax paper, whatever). Shape each into a ball, then if desired press 3 - 4 more chocolate chips into top (totally optional, mostly for looks...and more chocolate).
  • Align on two parchment paper or silicone baking mat lined baking sheets, spacing 1-inch apart. Bake in preheated oven about 5 - 6 minutes (they should still fill soft and slightly under-baked, they will continue to cook slightly once removed from oven so carefully not to over-bake).
  • Remove from oven and cool on baking sheet several minutes then transfer to a wire rack to cool. Store in an airtight container.

    These did not come out that well for me. They spreaded quite a bit so I chilled them for half an hour and that didn’t help very much. They didn’t bake with the crackly texture as in the picture. They just had a smooth surface as they spreaded out in the oven so didn’t look the prettiest. I was hoping they would look more like from a bakery. Maybe I’ll give it another try later.

      I’m sorry to hear this Mel! I’d try adding a little more flour and chill the dough for 1 hour before and that should help quite a bit as far as spreading.

    I followed the recipe exactly and mine flattened and spread like crazy. I’m bummed, they are edible (i don’t mind eating the uglies), but not gift able as i had wanted. I chilled the dough after scooping, so i can’t figure out where i went wrong. :(

      Sorry to hear this! Did you measure the flour as noted using the scoop and level method (rather than spoon and level) or in grams? It sounds like they maybe needed a little more flour. You could try just softened butter next time rather than partially melted and that should help with spreading as well.

    These came out delicious. We didn’t have corn starch so we added extra flour instead as we were mixing the dough, and we used about 1 tsp per cookie so we increased the baking time to 9-10 minutes. Even with these modifications, the consistency still came out perfect.

    My only comment is that they are a bit too sweet for my preferences, so next time I would add less sugar. In general I find a lot of American desserts too sweet and I usually add less sugar than recipes call for (except this time I didn’t, which is my fault) so if you’re like me then you’d be happier omitting some of the sugar; and if you’re not like me, then you’ll probably be perfectly happy with the recipe as is.

      I made these a second time because I devoured the first batch within two days haha (and mostly alone). This time I added 1/4 cup less sugar in total than the recipe calls for, and I found the sweetness level to be much better. They’re still very sweet with only 1/2 cup of sugar, but not overwhelmingly so as they seemed to me before. I also made them smaller this time and rolled into a ball, but I found that they baked better last time when they were slightly larger and more in the shape of fat cookies than balls. For some reason they didn’t really spread this time like they did last time.

        With less sugar cookies don’t spread as much and maybe butter was cooler or something? You could flatten them slightly before baking.
