Let the holiday baking begin! I love this time of year and all the delicious holiday treats that come with it! It snowed a lot here just yesterday so my kids and I built a snowman, drank hot cocoa by the Christmas tree, and made these purely irresistable Peppermint Meltaway Cookies.

Peppermint Meltaway Cookies

I can’t think of a better way to welcome in the Christmas season. Peppermint is one of the ultimate Christmas flavors and the options of what you can make with it are endless.

I’ve already made Peppermint Chocolate Cake, Peppermint Bark Cheesecake, Peppermint Sugar Cookies (soft Lofthouse style kind), and White Chocolate Dipped Peppermint Sugar Cookies. And now we’ve got one more peppermint cookie to add to the collection!

To say these are a dangerous cookie is an understatement. My small family finished all of these off in one day! Sure it doesn’t make a huge batch but still, normally we show a lot more restraint around here. We have to because I bake and cook for a living (this blog is my job in case you didn’t know, Sorry about those pesky ads.)

There’s always a serious abundance of desserts sitting around especially as we near the holidays. These though, goodbye self control, time to indulge a little.

After one little taste you will immediately understand why these are labeled “meltaway” cookies. They literally melt in your mouth. Their texture is dreamy and there’s not really any other cookie like it.  Peppermint Meltaway Cookies | Cooking Classy

Plus, they have the most delicious buttery, pepperminty flavor. And as if those things weren’t enough, these are finished off with a sweet, luscious peppermint frosting and tiny bits of crushed peppermint. It’s a cookie you’ll dream about.

They’re a cookie everyone will request again and again. I may have to hold off on making them again for a while since they’re much too good to resist.

Peppermint Meltaway Cookies

Delicious melt-in-your-mouth frosted peppermint cookies! Deliciously sweet and perfect for the holidays!

Instructions

  • In a mixing bowl whisk together flour, cornstarch and salt, set aside.
  • In the bowl of an electric stand mixer cream fitted with the paddle attachment cream together butter and powdered sugar until combined.
  •  Mix in peppermint extract then with mixer set on low speed slowly add in flour mixture and mix just until combined. 
  • Cover bowl with plastic wrap and chill until nearly firm, about 1 hour, while preheating oven to 350 degrees during last 15 minutes of chilling.
  • Scoop dough out 1 even tablespoon at a time, shape into a ball then transfer to an ungreased 18 by 13-inch baking sheet, spacing cookies 2-inches apart (keep dough that's wont be baking chilled). 
  • Bake in preheated oven until cookies are set and bottoms are lightly golden brown, about 10 - 13 minutes. Let cool on baking sheet at least 10 minutes then transfer to a wire rack to cool completely.
  • In the bowl of an electric stand mixer cream together butter, half and half, peppermint extract and powdered sugar until light and fluffy*. 
  • Working with one cookie at a time spread frosting over cookie and immediately after frosting each cookie add crushed peppermint bits before frosting starts to set, repeat process with all cookies. 
  • Store cookies an in airtight container at room temperature.

Notes

  • *If frosting is too thick add a little more half and half, if it's too thin add a little more powdered sugar.

    I was disappointed with how inconsistent these cookies baked. Some spread out way too thin and some stayed in little balls. I was going to just throw them away but decided to make the frosting and finish them. They looked better when finished. They taste okay not great. Won’t make them again.

    These cookies DID NOT turn out looking like the picture and were crumbly and fell apart as I took them off the sheet. . Not a fan

    This is my second recipe I have made from this site. The first one was delicious. I think that these were not mixed well enough I interpreted the language ‘mix until just combined was so they wouldn’t be overmixed. I think you have to mix these very well so the butter, flower and cornstarch meld together. I actually had 3 different mishaps on one cookie sheet. Balls that never flattened, very thin cookies that were impossible to get up semi normal looking ones. I’m a fairly well versed baker so I’m not sure if the recipe in finiky or if there is a secret or trick not stated in the instruction. They do melt in your mouth and have a delicate flavor. Glad I didn’t make the icing.

    What a lovely light cookie and oh, do they smell heavenly! The batter was smooth, very easy to work with, esp. when well chilled. The baked cookies are delicate but easy to work with when handled gently. I tripled the recipe and ended up with 62 cookies, using a tablespoon sized scoop. I’m taking them to a cookie exchange in two days, so I’ll frost them tomorrow, and they’ll have a day to “setup” for transport;-) I am very impressed with how pretty they are!!!

    These have worked out great for me! Just as the author notes in the recipe the recipe comes from both land o lakes and taste of home (as a highly rated contest winning recipe) and they worked out perfectly for me so I’m not understanding the poor reviews. These are a tender delicate cookie, hence the name.

    I made these today. So excited but they didn’t turn out AT ALL. Though dough would not hold together and was so crumbly they would not form into balls. I finally squished some dough together to form a ball and they baked into a buttery flat mess. Your picture looks nice but I’m not sure how this recipe can produce that cookie.

    I read the comments before making these and modified a few things. I added four crushed candy canes to the dough and cut the peppermint extract in the dough in half. After making the dough, knead it, roll it out and cut with a round cookie cutter. I know the recipe says form into balls but I have a recipe for another cookie with cornstarch in it and it is very crumbly and breaks apart if you don’t knead it and roll it out. I baked on parchment paper on cookie sheets for 8 mins and they’re perfect. Frost how the recipe directs. Hope that helps! I loved them.

    So this is the second year I’ve made these cookies. I made them last year for a cookie exchange and they were perfect. I didn’t have any issues of them flattening completely when baked, and them holding their ball shape is exactly what I wanted. The flavor is nice and light. I added more peppermint extract to the frosting as well as a little bit of peppermint schnapps. I’ve read other people’s comments with them expecting these cookies to be totally different then what they’re really supposed to be, which is something like a Mexican Wedding Cookie, but done with peppermint for the holidays. I mean, the recipe is called “Melt Aways” for a reason.
