One Pot Pasta Recipe

I love that with this recipe you are throwing all of the ingredients into one pot. Everything goes into the Instant Pot and there’s no sautéing beforehand. About 2/3 of the ingredients are added at the beginning then you’ll add the remaining 1/3 at the end.

The sauce will be very runny at first but the longer you let it rest the more it will thicken and become creamy.

Substitutes for this Tuscan Chicken Pasta Recipe

  • Frozen thawed and drained spinach can replace fresh.
  • Regular cream cheese will work in place of light.
  • If you can’t find campanelle pasta you could substitute another kind of bite size pasta such as cavatappi, bowtie or penne.
  • Garlic powder could replace fresh, I’d go with about 3/4 tsp.
  • If you don’t want to buy fresh basil then use 1 tsp dried, add it along with Italian seasoning.

  • Once it stops sputtering open lid and immediately stir noodles to separate then stir in spinach, light cream cheese and parmesan.
  • Toss well. Let rest for about 5 - 10 minutes to thicken (it will seem like soup at first but as it rests and cools it will thicken right up).

This was my first Instant Pot recipe to try. I used the Boursin cheese in place of cream cheese. I also sautéed the chicken with some onions and the garlic first. This was very tasty and since it ended up just being two of us tonight, we have enough left to have another night. Will cook this again.

Nice flavor and easy to put together. I might salt and pepper the chicken first as I find it a little bland and dry. Thanks

Adding salt to the chicken won’t make much of a difference as the broth will just wash it away, you can just add a little more salt to the broth though. Then as far as dry chicken I’d recommend just cutting the pieces just a little larger than done previously.

Loved this. Was my first insta pot recipe and it was easy and so yummy! Toddler approved too! I did add half of a diced onion though. Love love love.

Made this last night and it was good but there just wasn’t enough flavor for me. I believe as one reader mentioned perhaps substituting Boursin Garlic and herbs in place of the cream cheese would have helped. Or maybe using sausage in place of the chicken, then again I like a little spice or food with a kick.

I used Boursin too. We love the flavour. Mine didn’t thicken at all till it cooled to room temp. The only different thing I did was to add half a package of Boursin. Oh and crispy pancetta. I will add less stock I think next time. And there WILL be a next time, lol.

I made this tonight for dinner and I’m amazed at how good it was. I’m brand new to the instant pot world so I found this doing random searches. Absolutely excellent! Definitely going to be a regular dinner.

Absolutely delicious! Both myself and the husband loved it. Of course I added extra parmesan to my individual serving.
