Instant Pot Creamy Tuscan Chicken Pasta

One Pot Pasta Recipe

I love that with this recipe you are throwing all of the ingredients into one pot. Everything goes into the Instant Pot and there’s no sautéing beforehand. About 2/3 of the ingredients are added at the beginning then you’ll add the remaining 1/3 at the end.

Once time is up select “cancel” then use the quick release method to release pressure. Wait for steaming to stop from valve then open Instant Pot.

Stir in spinach, cream cheese and parmesan. Then let mixture rest for about 5 – 10 minutes.

The sauce will be very runny at first but the longer you let it rest the more it will thicken and become creamy.

Substitutes for this Tuscan Chicken Pasta Recipe

  • Frozen thawed and drained spinach can replace fresh.
  • Regular cream cheese will work in place of light.
  • If you can’t find campanelle pasta you could substitute another kind of bite size pasta such as cavatappi, bowtie or penne.
  • Garlic powder could replace fresh, I’d go with about 3/4 tsp.
  • If you don’t want to buy fresh basil then use 1 tsp dried, add it along with Italian seasoning.

  • Secure the lid in place, be sure pressure valve is set to "sealing" position. Select the "manual" setting or high pressure and set to 5 minutes.
  • After the time is up select "cancel" then use the quick release method to release pressure - which is to carefully turn the valve to "venting" position and step back as steam will release.
  • Once it stops sputtering open lid and immediately stir noodles to separate then stir in spinach, light cream cheese and parmesan.
  • Toss well. Let rest for about 5 - 10 minutes to thicken (it will seem like soup at first but as it rests and cools it will thicken right up).
  • Toss in basil just before serving and serve warm (you can also garnish with a few diced sun dried tomatoes if desired).

This was absolutely delicious. I used GF Angel Hair pasta and it was cooked to perfection. Definitely restaurant quality, my family LOVED it.

If I were to double the recipe for company (yes, loved it that much, will make it for family!) would I change the cooking time at all?

This is the first recipe of yours I’ve tried, definitely going to check out some more.

    Thanks!

Easiest and BEST Creamy Tuscan Chicken yet! Made a couple of tweaks – not a fan of “low sodium” or “light” stuff and purposely left out the basil but holy cow! Definitely going to be my “go-to” when I want a rich, warm and filling meal – weekends or during the week!
    Thank you for sharing!

So good! I followed the recipe exactly and doubled it. It came out perfect. I didn’t have any consistency problems.
    Amazingly delicious!

Thanks for putting the pressure cooker alternative (high pressure)! Saves me a “conversion” step.

Looking forward to the stove-top version of this, but wondering in the meantime whether I could make it in the slow-cooker, if I seared the chicken first… I’m leery about raw chicken, for obvious reasons! :)

My grocery store has sun dried tomatoes in a bag, no oil. Would I miss out on flavor using these? Would like to save a few extra calories if possible! :)

Those would be great too. They aren’t quite as flavorful in my opinion but still a good option and I use them sometimes in recipes too to save the calories.

All I can say is OMG!!!! This recipe is so simple and absolutely delicious! I will be making this over and over again since my 4 year old and 2 year old devoured it lol. Can’t wait to try your other recipes :)

What adjustments would be made to double this recipe? Simply double everything, including the liquid? Would you recommend adjusting the cooking time or leaving it alone. Thanks!

Sorry I’m not much help here, I can’t say for sure because I’ve never tried to double an instant pot recipe. My guess is that you would have to double everything (and of course have a very large instant pot) but without further testing I couldn’t say for sure. For instance you may not need quite as much liquid. You may find something here that helps https://www.hippressurecooking.com/how-to-double-a-pressure-cooker-recipe/
