One Big Oatmeal Cookie! Soft and chewy and perfect for when those cravings strike.

Since I’ve already posted two recipes for a single cookie (one chocolate chip cookie and one 3-ingredient peanut butter cookie) I decided why not keep a good thing going and share a recipe for one single oatmeal cookie! We’ve got to try them all in single batch form, right?

These cookies are moist and chewy and they are simply one of the best oatmeal cookies I’ve ever made or had (from bakeries included). I was so surprised that such a simple recipe could yield such fantastic results! This is definitely a recipe I’m going to hang on to for the days when I get a cookie craving but don’t want to take the time to make a full batch + have a huge mess in my kitchen.

I was intending on adding vanilla extract to this but forgot the second time around and I didn’t really notice, it just left room for the cinnamon to shine. So if you want to, add it, if you don’t, I don’t think it’s needed and it keeps the ingredient list down for this simple recipe.

Recipe for One Oatmeal Raisin Cookie

Craving oatmeal cookies but don't want to make a full batch? This is the recipe for you! It's so easy and seriously tasty!

Ingredients

Instructions

  • Preheat oven to 350 degrees. Place butter in a medium microwave safe mixing bowl. Heat in microwave on HIGH power until almost fully melted.
  • Add brown sugar, 1 Tbsp egg, flour, oats, baking soda, cinnamon and salt to melted butter. Stir until well blended (it will seem dry at first but it will start to come together). Add raisins and nuts and mix.
  • Shape dough into a 3 1/2-inch disk on a Silpat or parchment paper lined baking sheet. Bake in preheated oven 13 - 15 minutes until edges are golden but center is still soft. Cool slightly and enjoy!

Notes

*To get this, just crack an egg into a bowl and whisk until well blended, then measure out 1 Tbsp. Reserve remainder in refrigerator for another use.

    Judging by the photo, it appears the cookie is not quite cooked enough. The photo of the whole baked cookie appears to show that the center is not done. Check out the outside edges. Nevertheless, I am looking for a good chewy oatmeal raisin cookie recipe, but I don’t want to waste my time on just one cookie. I have too many family members who love oatmeal raisin cookies to make just one. Maybe someone can post the same recipe but a larger batch.

    Jaclyn!! I’m a lurker but I absolutely love your blog and simply had to leave a comment on this one: your blog is one that I go to for foolproof recipes, after trying a few of them. I usually evaluate whether or not I should do a recipe based on the comments of people who had tried it before (word search: made/tried) and I’m going to give this recipe all the assurance it can get!
    It is so convenient (5 minutes flat!) but has such a lovely texture and it tastes so good.. To other readers out there who are still undecided: try it, you won’t be disappointed!

    Ok, #1 The cookie is the bomb diggity good! OMG! I am not a dessert person except around ‘that time’ so I want something but not a lot or even leftovers so this was on time. I have had good and bad with those mug cakes so I thought I would give this a whirl. YUMMO! Make this guys. My only thing is I am greedy and even for me…I think you can definitely get two servings out of this and I dare say 3 cookies. I used exact measurements too. Maybe just me?

    Thank you for posting another big cookie recipe. This was delicious. Love the fact you can just make a cookie for two (or one if I am greedy) so quickly and have it turn out so good. My girlfriend’s hubby will be getting one of each of your big cookies as part of his birthday gift. I know he will love them too.

    This cookie is amazing!!! This will be my go to recipe. One question, does this recipe like quadrupedal? to make a batch? Best oatmeal cookie I have ever had!

      I’m so glad you liked it Erica! I don’t see why you couldn’t quadruple it, and I would probably just use one extra large egg (like the biggest in the carton of large if that’s what you have) because there are about 3 1/2 Tbsp in one large egg. It would just take a little muscle work to mix it all :).
