One Big Oatmeal Cookie! Soft and chewy and perfect for when those cravings strike.

Since I’ve already posted two recipes for a single cookie (one chocolate chip cookie and one 3-ingredient peanut butter cookie) I decided why not keep a good thing going and share a recipe for one single oatmeal cookie! We’ve got to try them all in single batch form, right?

These cookies are moist and chewy and they are simply one of the best oatmeal cookies I’ve ever made or had (from bakeries included). I was so surprised that such a simple recipe could yield such fantastic results! This is definitely a recipe I’m going to hang on to for the days when I get a cookie craving but don’t want to take the time to make a full batch + have a huge mess in my kitchen.

I was intending on adding vanilla extract to this but forgot the second time around and I didn’t really notice, it just left room for the cinnamon to shine. So if you want to, add it, if you don’t, I don’t think it’s needed and it keeps the ingredient list down for this simple recipe.

Recipe for One Oatmeal Raisin Cookie

Craving oatmeal cookies but don't want to make a full batch? This is the recipe for you! It's so easy and seriously tasty!

Ingredients

Instructions

  • Preheat oven to 350 degrees. Place butter in a medium microwave safe mixing bowl. Heat in microwave on HIGH power until almost fully melted.
  • Add brown sugar, 1 Tbsp egg, flour, oats, baking soda, cinnamon and salt to melted butter. Stir until well blended (it will seem dry at first but it will start to come together). Add raisins and nuts and mix.
  • Shape dough into a 3 1/2-inch disk on a Silpat or parchment paper lined baking sheet. Bake in preheated oven 13 - 15 minutes until edges are golden but center is still soft. Cool slightly and enjoy!

Notes

*To get this, just crack an egg into a bowl and whisk until well blended, then measure out 1 Tbsp. Reserve remainder in refrigerator for another use.

    What happens if you just leave out the egg because what are the chances of using the rest of your egg. The rest of the egg will probably be thrown out. What a waste.

      The egg helps bind the cookie so the texture won’t be the same without it. I use the remaining for eggs the next morning, or add it to french toast or save to make another cookie that week. I don’t like to waste it either.

    This recipe was quick and easy. The cookie was a bit too sweet for me though. May try cutting down on the amount of sugar next time. Anyone try reducing the sugar with success?

    I made this cookie for my mom a few days ago because she wanted something sweet. I used chickpea water on T of it instead of egg and it worked perfectly. I tasted a little of the cookie and it was perfect. So again thank you for posting. I’m gonna make one for me now :)

    This was great! I doubled it (so hubby could have one too) and just went ahead and added a whole medium egg (seemed about right). I was worried it was going to be too sweet, based on how the batter smelled, but it was perfect; Just a little crispy on the outside and soft inside. I put a little jam in the center so I could call it a breakfast cookie. (Made it in a toaster oven with no issues.) Will definitely make again.

    I omitted the nuts, doubled the recipe, and I can get about 11 small cookies out of it. These are absolutely the best! I will be making them as part of my x-mas sweets plate that I give out to friends and family. It is a hit, for sure. Thank you. :)
